Sweat ¼ cup diced red pepper ¼ cup diced scallions green part only 2 tsp minced garlic 1 tsp minced fresh thyme 2 Tsp olive oil salt pepper Mash 1 can black eyed peas drained rinsed and divided 1 egg white 1 Tbsp cornmeal 1 tsp cornmeal 2-3 dashes of Tabasco prepared corn bread Comeback Sauce puree ¼ cup chopped onion, 2 cloves of garlic, ¼ cup of mayonnaise, 2Tbsp each of Worcestershire Sauce and lemon juice and 1 tsp of yellow prepared mustard. Season with Tabasco and black pepper. Can refrigerate up to 2 weeks.
