This is my mother-in-law's version of Scotch Broth. The traditional recipes use beef or mutton, but I couldn't bring myself to change it. I've amended her version a bit and skipped the homemade stock, opting to use just stock cubes. You can definitely make your own stock and just top up the flavour with a portion of the stock cubes it calls for.
