Meatloaf is a comfort food that everyone had growing up, except for me. I grew up in a traditional Chinese home. I didn't have meatloaf until I was in college. Sadly to say, my college experience with meatloaf was not very good. I’ve tried many different recipes for meatloaf and this recipe is classic. The flavors are simple but the oatmeal helps to keep everything moist. This is great for dinner but also wonderful for lunch as a sandwich. Even though I didn’t grow up with meatloaf it is now a staple comfort food. Enjoy!
