Super quinoa bowl (+ homemade sweet chili sauce)

It is that time of the day that you are getting really hungry. You are now wondering what to eat. But not just to eat anything – you are looking for something delicious, highly nutritious and easy to prepare. Having a bowl full of protein and nutrients with an exceptional flavour is what you want to have. The answer is a quinoa bowl with roasted brussels sprouts and sweet potatoes topped with sweet corn, hazelnuts, fresh onions and homemade sweet chili sauce. On top of all that I have mentioned it’s also vegan and gluten free. If you’re not a fan of brussels sprouts you can use broccoli instead. The combination of the sweet potatoes and the bitter brussels sprouts with the sweet chili sauce is divine. It all comes together to balance out all of the strong flavours that these ingredients have. The sweet chili sauce acts also as a dressing to the fluffy quinoa.
