Prosciutto-wrapped asparagus bundles

recipe

We made these to go along with our spring green salad. Maybe not the best combination, but it worked. I think these are meant to be served as a side/appetizer for like an easter brunch or something. They sure make an impressive presentation. They were quite good, we'll definitely be making them again, but they were a bit on the salty side though. Next time we would not salt the asparagus or the breadcrumbs, since the prosciutto adds more than enough saltyness. We might even wrap each bundle with just one slice of prosciutto instead of two.
