A simple beet salad with garlic is made more delicious by adding piquant pickled cucumbers and boiled eggs. It perfectly combines the sweetness of beets, the sourness of cucumbers, and the piquant note of fried onions. Beetroot salad with egg and pickled cucumbers can be served not only for dinner, but also for a holiday. As a rule, most of the time is spent on preparing the beets, and cutting the salad is a matter of a couple of minutes. Today I will tell you how to quickly cook beets in the microwave. It will take a minimum of time, and the result will pleasantly surprise you!
Ingredients
- Beets - 200 g.
- Eggs - 3 pcs.
- Pickled cucumbers - 200 g.
- Onions - 2 pcs.
- Garlic - 2 cloves.
- Vegetable oil - 50 ml.
- Salt - 0.5 tsp.
- Black ground pepper - 0.25 tsp.
- Mayonnaise - 50 g.
- Dill - 3 sprigs.
Cooking steps
Step 1:
Wash the beets, prick them with a fork in several places, and place them in a baking bag. Tie the ends of the bag tightly on both sides. Place the baking bag with the beets directly on the glass microwave tray. Cook the beets for 2 minutes at 800 W. Then take a break in cooking for 1 minute to let the oven cool down a little. Turn on the microwave again for 2 minutes, then take a break for 1 minute.
Step 2:
Alternating cooking cycles, bring the beets to readiness. As a rule, this takes 8-10 minutes. Carefully open the baking bag, cool the vegetables to room temperature.
Step 3:
Peel the onion and cut into half rings. Place the vegetables in a frying pan with heated vegetable oil.
Step 4:
Stir occasionally, sauté the onion over medium heat until lightly golden.
Step 5:
Boil the chicken eggs hard, cool in cold water, peel and cut into small cubes. Transfer the chopped chicken eggs to a salad bowl.
Step 6:
Grate the beets on a coarse grater and add to the eggs.
Step 7:
Place the sautéed onion in a salad bowl. To remove excess oil, you can first place it on a paper towel.
Step 8:
Cut the pickled cucumbers into strips, squeeze out excess juice and add to the salad.
Step 9:
Add finely chopped dill and garlic pressed through a press for flavor.
Step 10:
Add salt and ground black pepper to taste. Season the salad with a little mayonnaise.
Step 11:
Mix the ingredients until smooth. Put the finished salad in the refrigerator for 30 minutes to let it sit and cool.
Step 12:
Juicy salad with beets, eggs and pickles is ready!
