Today I suggest trying an incredibly delicious combination of products: spinach, feta cheese and crispy puff pastry. We will cook a fragrant layered pie Spanakopita, without which no Greek feast is complete. For the recipe, you can use fresh or frozen spinach. The cheese for baking should have a sourness and saltiness in the taste, so it will go better with fresh spinach. In this recipe, I used feta cheese. The filling is very tender and juicy, and the dough is crispy. A wonderful combination, be sure to try it!
Ingredients
- Puff pastry without yeast - 1 kg.
- Frozen spinach - 400 g.
- Onions - 2 pcs.
- Chicken eggs - 2 pcs.
- Feta cheese - 300 g.
- Vegetable oil - 25 ml.
- Milk - 50 ml.
- Salt - 0.5 tsp.
- Ground paprika - 0.25 tsp.
- Dried italian herbs - 0.25 tsp.
- Dill and parsley - 1 bunch.
Cooking steps
Step 1:
Take the puff pastry out of the refrigerator in advance so that it defrosts and becomes elastic.
Step 2:
Put the frozen spinach in a dry frying pan. Stirring, heat the greens over low heat until the liquid has completely evaporated. Cool the spinach to room temperature.
Step 3:
Peel the onion, cut into small cubes. Place the vegetables in a preheated frying pan with vegetable oil. Stirring occasionally, fry the onion over low heat until lightly golden.
Step 4:
In a separate bowl, combine 2 chicken eggs and 50 ml of milk. Mix the mixture with a whisk until smooth.
Step 5:
Combine the spinach and sautéed onions in a deep bowl. Break the feta cheese into small crumbs with your hands and add to the pie filling.
Step 6:
Wash the dill and parsley, dry off any moisture, chop finely, and add to the other ingredients. Salt the filling to taste and season with spices for flavor. Set aside 2 tablespoons of the egg-milk mixture for greasing the pie, and add the rest to the filling. Mix the mixture until smooth.
Step 7:
Roll out half of the puff pastry into a rectangular layer 3-4 mm thick.
Step 8:
Place the dough in a heat-resistant form covered with parchment paper, forming sides 1.5-2 cm high. Spread the spinach and feta cheese filling on top in an even layer.
Step 9:
Roll out the remaining half of the dough into a rectangular layer 3-4 cm thick. Place the dough on the filling, carefully fasten the edges of the pie, tucking them inward. Cut the pie into square or rectangular segments with a sharp knife. Using a culinary brush, grease the Greek pie with the egg-milk mixture.
Step 10:
Place the Spanakopita pie in the oven preheated to 180 degrees. Bake it until golden brown for about 25-30 minutes.
Step 11:
Cut the finished pie into portions and serve warm.
Step 12:
Baked goods can be served with kefir or sour cream. Bon appetit!
