I'm always looking for new chicken recipes that are easy and delicious. I recently came across a recipe using a secret ingredient that I knew I had to try! Can you guess what gives this Ranch Chicken it's sweet flavor? We can't wait to share it with you! Perfect chicken every time Before we get to the secret ingredient, I want to share one tip that will guarantee perfect chicken every single time. It takes a few extra minutes but I promise it's worth it! Place your chicken breast between two pieces of parchment paper. Using a meat mallet or in my case, my husbands hammer, gently pound chicken into 1/3-1/4 thick pieces. Sometimes this is easier if you slice your chicken in half down the center, making the pieces thinner to begin with. This thin chicken will cook a lot faster than a regular chicken breast, so you do need to watch this while it cooks. Heat up a skillet with olive oil, vegetable oil, coconut oil, or butter, and toss your fillet on the pan. The secret to perfectly cooked chicken is covering the skillet so the chicken is trapped in the heat. Without removing the lid, set a timer to 3 minutes. After 3 minutes, open the lid and flip again. After the initial 6 minutes, you can remove the lid and finish flipping until completely cooked, but it shouldn't take much longer. Sweet secret ingredient Now to the part you've been waiting for! What's the secret ingredient giving this chicken it's sweet coating? Pancake mix. We love using Kodiak Cakes because of the extra protein but any pancake mix would really do. If you don't like ranch, we've also made this chicken using lemon pepper and finishing off the cooking process with some fresh lemon slices, it was AMAZING. But this ranch chicken really hit it out of the park! You could use a lot of flavor combinations, just mix them in with the pancake mix and rub it into your chicken.
