We love how easy these Instant Pot Egg Roll bowls are. With just a handful of ingredients and a handy Instant Pot, these come together quickly! I often make recipes that only need a little bit of cabbage and then I don't know what else to do with that head of cabbage! This is a great recipe for using the rest. Otherwise, you can grab a bag of the pre-shredded cole slaw mix and dump it right in. How to Make Instant Pot Egg Roll Bowls: On the Instant Pot, press the Saute button. Wait until it's hot and then add pork. Add your seasonings and soy sauce. Brown the meat. Drain extra fat from meat if needed. Turn Instant Pot off and add chicken broth. Add bag of cole slaw mix on top and DO NOT stir. Lock lid in place and turn knob to sealing position. Press the Manual or Pressure Cook button and set for 0 minutes (Yes! Zero minutes.) When timer is up, preform a quick release. Open carefully and give everything a quick stir. Dish into bowls, drizzle with favorite sauce, and serve! Why are we cooking for Zero minutes? Because we brown the meat using the saute function and cabbage doesn't take long to cook, we set the Instant Pot to cook for zero minutes. The Instant Pot takes time to build pressure before it begins to count down the "cook time." Your dish is cooking during that time the pot is building pressure. So, "zero" minutes is really just right for this dish. Add seasoning to Taste: Choose a low-sodium soy sauce. This will help ensure the dish isn't too salty. Check the sodium content on the chicken broth as well. You can always add salt later if needed, but you can't help if it's too salty to start with. The other seasonings can be added to taste as well, based on your preferences. Making substitutions: This recipe is so flexible. Feel free to play with it and make it how you like it. The flexibility makes it great for a quick weeknight meal. You can use whatever meat you have on hand or your family likes best. We used ground pork, but you can use ground turkey or ground beef as well. Keep in mind that different meats will have different fat contents. Some leaner meats may not need to be drained after browning, but others will. If you prefer fresh cabbage instead of the cole slaw mix, go for it! This recipe is a great way to use up unused cabbage, but the cole slaw mix is fast and easy. You can find it in the produce section with the bagged salads.
