Pico de guaco

Sometimes the hardest thing about coming up with recipes is naming them. This recipe I went back and forth, and forth and back again with the name. I really still haven’t decided that pico de guaco is the name I feel best describes this recipe. I am still liking pico-mole, but my mom asked me if it was some type of mole. So that was a no go. My husband really liked guaca de gallo, but that just sounded weird to me. You have to find the most perfect combination of syllables. It can’t be too long or too short. Not too descriptive and just descriptive enough. I guess it is kind of like being a wife; you have to learn how to be just enough of a nag without going over the edge. As a wife, you get a little more leeway than a girlfriend. But, if you are a good wife, you know that when your “honey do” list is starting to sound more like a ransom note, it is time to scale it back a bit. I digress…back to the recipe.
