Marinated shaved red onions

My father can't handle the acid of raw onions in his food anymore, but I love onions. So when I spend my summer weekends with my parents out in the country I always make a batch of these so we can both be happy with our summer lunches. The longer they marinate, the yummier they are, and the "softer" they taste, as the acid has the chance to mellow. I use them as a topper in salads that I love having onions in....spinach salads, steak or chicken salads; they go great on a hamburger or hot dog; my mom loves it with some amazing mozzarella and tomato. Your choice of herb can enhance its use: Try using mint with the onions and top on a sliced steak salad with spinach and feta. The list is endless!

Must-have scalloped potatoes recipe

Using a mandoline slicer has proven to be painful if you get a bit distracted. My daughter will vouch that I’m like a magpie – easily distracted by shiny objects. Only this time my distraction was dull (unlike my mandoline) and a shade darker. Making scalloped potatoes was probably a bad idea.

Penne with shaved brussel sprouts and soyrizo

I think I may call Trader Joe's and tell them I am there biggest Soyrizo fan. Over the past few weeks I've come up with so many ways to use it, and its not because Im bored. Really. <br />I had leftover Brussel Sprouts from a salad I made, a pasta recipe that called for brussel sprouts, and half a tube of Soyrizo in the fridge calling my name. So, an idea took hold. And here it is.

Raw shaved fennel, celery root and apple salad with buttermilk dressing

I love fennel. It's so versatile - it's wonderful roasted as well as raw, like in this salad. This is such an easy, refreshing salad to make - well, as long as you have a little mandolin to get the slices nice and thin.

Pumpkin spice (and everything nice) muffins

A muffin recipe has to be really good to get my endorsement. When it comes to baked goods, I have an exacting palate, and I am very particular about my muffins. Too many so-called muffins

Caramilk brownie bites

My sister and her husband came to visit a while ago, and very thoughtfully brought me a post-gestational-diabetes present - a large box of Cadbury's chocolate bars. I believe the box held 50 assorted bars,

Chocolate cherry breakfast bars (original recipe)

The dreaded school lunch. I don't quite know why this is, but making children's lunches for school is about as rewarding as making a beautiful gourmet dinner and then flushing it all down the toilet

"What the heck is a Candy Cane Joe Joe?", some of you may be asking. Ah, 'tis a sad business that not everyone in the world can know the pleasures of the Candy Cane Joe
