Mama's ham salad sandwich

We ate a lot of ham when I was growing up, and I still love ham in all its permutations. One of my favorites as a child was when we'd be down to almost the last of a big picnic ham, and Mama would take the bits and pieces off the bone and grind them for ham salad, which then served as a sandwich filling for the next couple of days. My son eats okonomiyaki so he can smear it in Chuno Sauce. I recommend my Homemade Chuno Sauce which is a perfect match for real Bull-Dog Vegetable and Fruit (Chuno) Sauce, available at Amazon. You can also add a little mayo to the Chuno Sauce in Osaka style. <br />You could also cook pork separately, then lay on top of the okonomiyaki.


Goat cheese grits with red eye gravy, country ham, and a fried egg

This is slightly elevated diner food, an updated classic if you will. The creamy, slightly sweet, tangy grits along with salty ham, coffee gravy, and the ever perfect sunny side up egg result in the quintessential southern breakfast, but don't feel married to breakfast -- this meal is good for invoking the laid back vibe of a diner any time of day.
