1 pound Brussels sprouts, trimmed, tough or damaged outer leaves removed 2 large or 3 medium carrots, peeled and cut in half crosswise 1 large apple, such as Gala or Fuji, cored and diced ⅓ cup pumpkin seeds, toasted 2 tablespoons fresh lemon juice 2 tablespoons Grade B maple syrup 1 tablespoon extra-virgin olive oil ½ teaspoon ground cinnamon ¼ teaspoon ground ginger Sea salt, to taste
