½ cup reduced-sodium chicken broth 3 tablespoons dry white wine 2 tablespoons cognac 1½ teaspoons extra-virgin olive oil 1½ teaspoons butter 1 whole chicken (3 to 3½ lb), skin removed, cut into 8 pieces ¼ teaspoon salt ⅛ teaspoon freshly ground pepper 40 cloves garlic (about 4 whole heads), peeled 2 teaspoons fresh thyme leaves 4 teaspoons chopped fresh parsley, if desired
