½ cup raw walnuts ½ cup sugar 1 pound boneless, skinless chicken thighs or breasts, cut into 1-inch cubes 1 tablespoon soy sauce 1 tablespoon Chinese rice wine or dry sherry 1 teaspoon cornstarch 1 tablespoon peanut or vegetable oil 2 scallions, chopped 1 red bell pepper, sliced into thin strips ¼ cup frozen peas 2 teaspoons hoisin sauce 1 teaspoon sesame oil Salt and pepper to taste
