1 pork shoulder, 2kg to 3kg (or use fresh ham) 2 tbsp hoisin sauce 4 or more cloves garlic, peeled 4 cm ginger, peeled and cut into coins 1 or 2 fresh or dried hot chillies (optional) 1 bunch green onions, cut into pieces 2 tbsp five-spice powder, or 1 tbsp ground cinnamon 1 tbsp salt 2 tsp freshly ground black pepper Sesame oil as needed 1 tbsp rice vinegar Soya sauce 1 cucumber, peeled, seeded and chopped 1 bunch coriander leaves, cleaned but left in sprigs
