Mushroom and spinach crepes with goat cheese and balsamic drizzle

It had been far too long since I had last had a good mushroom dish and I had been craving them. It seemed like the perfect opportunity to combine the mushrooms that I was craving with the new whole wheat crepe recipe that I wanted to try. I kept the mushroom mixture pretty simple using some of my favorite flavours. I decided to use shiitake and cremini mushrooms to form the base of the dish and I wanted something green so I added spinach. Thyme goes really well with mushrooms and it became the primary herb of the dish. I
