I have been enjoying using quinoa since I first discovered it and my favorite way to use it is in salads. I am always on the lookout for new quinoa salad recipes and I recently came across this one for a quinoa salad with roasted vegetables in my bookmarks. This salad sounded almost perfect. I really like roasting vegetables and this salad is full of roasted vegetables. It also called for marinated artichoke hearts and I had a jar that I had just been itching to try. I did not have any sun dried tomatoes and since we were roasting
