After enjoying the edamame dip last week I was in the mood for more dip and I was thinking that this time I would try a white bean dip. White bean dips are generally pretty simple with very few ingredients and they form a great base or platform that you can build on by adding flavour. I had an extra red pepper in the fridge and I thought that a roasted red pepper white bean dip would be a great idea. Roasting red peppers concentrates their flavour and they become a really nice savoury kind of sweet that would go
