While I was enjoying my chicken satay with spicy peanut sauce my mind wandered to the fusion Korean/Mexican that I had been experimenting with recently and I wondered how a Thai/Mexican fusion would work. I had a bit of leftover satay along with some peanut dipping sauce and the first thing that popped into my head was quesadillas. I figured that the chicken satay and peanut sauce along with some cheese would form the base of the quesadilla but I wanted to fill it out a bit more and add some heat.
