A little while ago I made a guacamole omelette with salsa and while I was enjoying it I thought about the black bean guacamole that I had liked so much and I wondered how a black bean guacamole omelette would work. The black bean guacamole is nice and creamy similar to an avocado guacamole and I figured that the bean version would be a nice healthy alternative to the avocado version.
