Spring in Utah, means that it either almost feels like Summer, or it's rainy and cold and it might snow...sounds predictable, right?! (haha) So when it comes to cooking for my family this time of year, I'm all over the map. This one pot chuck wagon stew is hearty delicious and pure comfort food on a chilly night.
