Hope everyone had a great Thanksgiving. Ours was a really great~busy, but great. I made this coconut cake for my family for the holiday, it is one of my husband's favorites. I got the recipe off of the Food Network, and it is actually called 'Put the Lime in the Coconut Cake'. It's a super rich cake topped with a coconut, cream cheese icing. I have made it a few times and have tweaked the recipe to my liking...it's actually not a hard cake to make and is great to make ahead, just save the frosting until you are ready
