These Coconut Chocolate Chip Cookies are my new favorite way to make chocolate chip cookies! The coconut oil gives them a great flavor and the shredded coconut amps up the sweetness! LOVE these! Just when you thought I couldn't come up with another version of a chocolate chip cookie recipe. I know, it's a disease. A few months ago when I compiled the list of all my chocolate chip cookie recipes I kinda-sorta thought I might be done. Turns out no.
