Our family was vegetarian for many years, and although we no longer are, this remains one of our favorite dishes. It's light, relying on fresh ingredients as well as a good quality olive oil for outstanding flavor. Because quinoa is nutritionally outstanding with a high protein, vitamin and mineral levels, this pilaf makes an excellent meatless meal when served with fresh bread and a side salad of greens.
