Stealth zucchini dinner (shh..please don’t tell my kids)

My kids freak out if they see anything green in their food. So I modified another recipe so that the zucchini goes undetected. It is so yummy that they gobble it up and I feel good about using up the monster sized zucchini in my garden. If your kids are super detectives peel the skin off the zucchini first with a vegetable peeler, but I never do and they haven't caught on yet.
