The hubby was making a coconut marinated pork roast so I was looking to pair a veggie dish. I had a spaghetti squash, that I wanted to try something different with. This is the result! It makes great leftovers! Also the cooking of the squash can be done ahead of time and the finally assembly before serving will only take a few minutes.
