This recipe is my absolute favorite -- lovingly passed on from a good friend who grew up in the Southwest around all sorts of Mexi cooking. The key to it is undoubtedly the sauce -- which takes a little more time to make from scratch -- but it's simple and OH-so-worth-it. :) Enjoy!!
