I was leery because this began as a 'healthy' alternative to the Mexican food I always crave. Have faith ladies, I found a way to make it unhealthy by adding the cheese! This is a repeater in our house. I go the easy route and use packaged Spanish rice, but if you have your own recipe, go for it!
