Chocolate truffle cookies

This is one of my go-to cookies on a cookie tray for holidays or special occasions. They're quick, easy, and SO good! I liken them to a Mexican Wedding Cookie, only chocolate. Add some chocolate chips to bump up the flavor even more, then dress it up with a confectioners' sugar/cocoa coating. Present them in mini muffin paper liners to dress them up even more.
