This salad is super easy to make with minimal ingredients, but is so delicious it almost tastes sinful! The flavors and textures are reminiscent of my favorite salad from Panera -- the Fuji Apple Chicken Salad. Yum. This recipe serves one, but can be easily multiplied to feed two or even a crowd.
