Mini potato latkes with smoked salmon and dill

This version is a more traditional Latke, with the potato and onion shredded. You can eat them plain or add something on top for an extra “wow” factor - like these with salmon, dill, and sour cream. NOTE: prep time is based on you using a food processor to grate the potatoes, and the ability to fry 4 latkes at a time.
