Croquetas are a typical dish in Spain. Similar to fritters, they are made of a simple gooey roux and then breaded and fried up. They can be served as appetizers or a main course. While studying in Spain, these croquetas were a fave of me and my roomie - so our Spanish friend taught us how to make them. Yum!
