My mum's friend over the years has become my friend. Since I was a teenager she has made this lemon cheese for me regularly. When I moved away from home, I got the recipe. It's so easy and so scrumptious! Put it on bread, toast, cakes, muffins, in yoghurt or make pie with it... it has so many uses but you can also just grab a spoon!!
