This is a kind of funny-looking soup in that when it is freshly made, it's covered in foam and looks creamy although it is not. Don't be scared. Chicken, rice, eggs, and lemon combine to make a heavenly version of chicken soup that really will knock a cold out of you. It takes time as it is made in a few stages but it is totally worth it. You will need some kind of mixer or blender (or tireless arms) to whip the egg whites.
