This souffle is a family favorite. I have to make a triple recipe on holidays because it is so popular. The souffle is easy to make, and is a beautiful orange color. Nobody ever guesses it is made from carrots. The secret to the crunchy topping is using panko breadcrumbs. You can leave out the apple brandy without affecting the recipe, but the brandy gives it a special taste.
