Peach, arugula, and goat cheese salad with citrus vinaigrette

This is my recreation of a salad I had at Trap Rock Brewery in Berkeley Heights, NJ. Make the dressing ahead of time to allow the flavors to come together. Unfortunately, peaches and arugula aren't in season at the same time, but you can usually find arugula in the grocery store year round. If you can't find it, substitute baby greens, mesclun, or a mix of butter and red lettuces torn into bite size pieces.
