We LOVE the regular version of Eclair Cake, served with fresh strawberries on top. For a fun change, we decided to try this peanut butter version. It did NOT disappoint! The best part about these recipes, is that although they taste like a cake and look like you worked super hard to make, they are literally layers of graham crackers and fluffy pudding goodness.
