Shepherd’s pie is a staple of traditional Irish cooking and there are many, many versions out there. This recipe was the one my mother-in-law always made. A definite favorite of The Husband. It's easy and is one of those dishes that you can change and adapt to whatever vegetables your family likes or you have on had. So in honor of The Husband and my children’s Irish roots, dig in and enjoy!
