My multigrain pancakes with peach compote

I love making (and eating) pancakes. After lots of failed attempts for the perfect multi-grain pancake, this is it. My secret cooking technique is to mix up some brown sugar, butter and cinnamon and this is the butter I use to cook the cakes in. It turns an okay pancake into something absolutely remarkable. The peach compote sends this recipe over the top! Enjoy!
