Gluten-free ginger cookies have been on my to-make list for a while. Tates makes a good crispy version that I sometimes buy and crumble over vanilla ice cream. But it’s the giant, pliable ones with loads of holiday spices that I crave come this time of year. These flour-less cookies hit the spot.
