Mango & smoked chorizo sandwich with blackened chicken and chimichurri

Growing up in India, in the spring and summer season, everyone in the family would look forward to dessert. More often than not, it featured mangoes. Given what this fruit means to me, I thought it was fitting to pay this homage to it. This is a sandwich like no other! Spicy chorizo, smoky chicken, sweet mango, and refreshing chimichurri set between toasty ciabatta. Check all flavor boxes!
