An oldie but a goodie and so, so simple. I remember making these with my mum as a child, so that's how simple they are. Very quick to make when you realize you have no cakes for your husband's cuppa tea at lunch time! You can also add any combination of fruit or spices to them to make different flavours. Please don't let the name put you off, they are called Rock Cakes because of their rocky look (I think!).
