There's nothing quite as comforting as a wedge potato or as we like to call them here in the beautiful pacific northwest Jo-jos! But I couldn't help myself and made them gluten free with a garbanzo bean flour and shiitake mushroom salt, plus just a little less fried but still crispy oven baked Jo-Jos
