Cherry tomatoes are roasted with olive oil, garlic, and herbs until bursting and juicy. Warm tomatoes are then tossed with ciliegine (mini mozzarella balls) and fresh basil. Serve as is for a refreshing side, on top of fresh polenta for a rustic italian meal, or tossed with freshly cooked pasta for a meal. This recipe is delicious enough to be served to guests and easy enough to put together on a busy weekday night.
