Traditional Porchetta is made with a pork shoulder, but here we have chosen the leaner pork loin. We fill it with all of the usual trimmings: sage, rosemary, garlic, and fennel seed. The result is a stunning spiral of pork and herbs and Oh the smell? It smells so good!
