These Strawberry Daiquiri cupcakes have just the slightest hint of rum (you can substitute Rum extract for kiddos) in their luscious cream cheese icing, they’re stuffed with strawberries enhanced with just the slightest bit of lemon zest and sugars, and made with a (boxed!) cake mix that falls somewhere between a white cake and an angel food cake. These cupcakes are really, really tasty, not too sweet, and surprisingly easy thanks to good ole Pillsbury.
