I picked a beautiful bunch of beets at the farmer's market last week and they just sat in the fridge. <br />I knew I wanted to do a pasta dish using the greens as well as the beets which were very small. So now the summer is really kicking in with our temperatures hovering near 100. I sure don't want to cook but I've got to deal with the beets. I put together a simple dish with just what was on hand. I didn't have to really cook and the results were pretty delicious and different.
