This is one of my go to dishes when I come home from a long day at work; particularly on Thursday when I eat on my own since my husband is working late at a tasting at our wine shop. It is pretty quick to throw together and I typically have all the ingredients on hand (including the shrimp since I tend to keep a bag of local key west shrimp in the freezer). I usually make enough for two so there is a bowl for my husband when he gets home if he hasn't already had a bite to eat. And if he has, I get to take the leftovers to lunch the next day. Lucky me!
