This isn't your typical boring salad. Here, a buttery Steelhead trout fillet is complemented by the bright flavours of the roasted beets and raw radishes, and it gets a kick of incredible richness from the guanciale (an Italian cured, unsmoked bacon - you can substitute pancetta or regular bacon if your butcher doesn't sell guanciale). The spoonful of dijon mayonnaise this salad is topped off with adds another hit of intense, addictive flavour.
